Fluffy with a slight crisp outside, these roasted potatoes are a must-have at every carb-lover's table during Christmas. They are also straightforward and fuss-free to make. Simply peel & cut, mix and put into the oven!
6-7 medium sized Potatoes, washed, peeled and cut into quarters
1 tbsp neutral-flavoured Plant Oil
1 tbsp Mekhala Living's Roasted Sweet Chilli Paste
1 tsp Oregano
1 tsp Basil
1/2 tsp Salt
1. Preheat oven to 200C.
2. Put cut potatoes into a colander and rinse in water till water is slightly cloudy. This is to remove some starch so that the surface will be more crispy. Drain and set aside.
3. In a large bowl, mix Roasted Sweet Chilli Paste with oil, oregano, basil and salt till it forms a paste. Transfer in potatoes and mix till each piece is coated evenly.
4. Transfer to a baking pan lined with baking paper. Roast at 200C for 20-30mins, rotating the pan at the 15minute mark until potatoes are golden brown and the edges are dark brown. Remove from heat and serve warm.
